School kitchens, which had become microwaving facilities following compulsory competitive tendering in the 1980s, were rebuilt to permit cooking from raw ingredients. Kitchen staff were trained (or retrained) to cook.

I was really glad to see these stories focus on the concrete actions people and organisation have taken to reduce their emissions. Signing up is great, but 10:10 is ultimately about doing, and the imagination and ambition 10:10ers have shown in making their carbon cuts is really inspiring.
